Slow roast with the heat reflection shields integrated into the lid and residue tray for convention-like cooking, or use both burners at once for direct heat to sear steaks and seafood. Average temperature ranges for this grill are between 250-650 degrees and are monitored by the recessed, built-in thermometer.
